I was wondering if connecting each computer to a server configured as a proxy with only one firewall working on the server will protect all computers connected to it, or do I need to install individual firewalls on each computer?

It actually depends on the firewall which you are using.
Incase your firewall has settings for proxy connections then you do not need to install different firewall programs, all you have to do is then feed in the settings for your client computers thats it and your protected for your client computers, but if your firewall does not support proxy settings you will have to install individual firewalls for each proxy connections which are communicating with your server.
In order to find out if you firewall product supports multicomputers from the servers check out the help page you will surely get some information onto it.
